I want to give a style to the list of the categories. How?

The list of categories viewed at the page is inside a div with a class "gprojects_cats". Just style that class in your stylesheet and you're done.

How to remove the General category?

Unfortunately, The General category can not be disabled. However, if it's empty, it will disappear automatically.

The number of clicks is not working. Why?

If you're not using the {url_link} template, you will have to add the {apply_number_of_clicks} tag inside your a tag. for example: <a href="url" {apply_number_of_clicks}>Test</a>.
