In order: a variation-level override (for that specific variation) beats a product-level override, which beats a category override, which beats a shipping-class override, which beats a matching postcode rule's own days, which beats a shipping-zone override, which beats the global default. Only one rule is used — the first one found in that order. The admin Simulator tab shows exactly which one resolved for any test you run.
Yes. Each variation of a variable product has its own "Override delivery estimate" option in the Variations tab, separate from the parent product's setting.
