Where does the extra custom field of registration will display?

Find section "User Forms : Registration Custom Fields" by Edit User Screen from the back-end.

Can we assign any user role to new users sign up?

Yes. You can assign a any user role to new register user. The default user role selector setting will automatically be assigned that specific role to the users when sign up on your site. Default role is Subscriber
