Documents cannot be moved to Trash, because that would break their permanent link. Permanently deleting the Media Library file, on the other hand, deletes the Document and its history too; the plugin warns about this before you confirm.
Uninstalling removes the plugin's Documents, version history, settings and private storage folder. Media Library files are never touched.
